- WHAT IS PORCELAIN ENAMEL ON CAST IRON? It is glass that becomes bonded to the cast iron at high temperatures. A particulate of glass, called frit, is applied to the cast iron vessel and then baked at temperatures between 1200 and 1400° F. The glass frit melts and fuses to the cast iron, forming a bond. Porcelain enamel on cast iron is heat tolerant and impervious to water and other consumables.
- EASY TO COOK AND CLEAN: The porcelain enameled interior has a smooth finish that minimizes sticking, promotes caramelization and resists staining. Although enameled cast iron is dishwasher safe, hand washing with warm soapy water and a nylon scrub brush is recommended to keep your Dutch Oven in tip top shape!

Cooking And Caring For Your Lodge Enameled Cast Iron
1. Allow cookware to cool.
2. Although dishwasher safe, hand washing with warm soapy water and a nylon Scrub Brush is recommended to preserve the cookware’s original appearance. Citrus juices and citrus-based cleaners (including some dishwasher detergents) should not be used, as they can dull the exterior gloss.
3. If necessary, use nylon pads or scrapers to remove food residue; metal pads or utensils will scratch or chip porcelain.
4. Slight stains can be removed by rubbing with dampened cloth and Lodge Enamel Cleaner or other ceramic cleaner according to directions on bottle.
5. Dry cookware thoroughly before storing. Do not stack cookware.

This 1.5 Quart enamel Dutch oven is great for cooking, marinating, refrigeration and freezing. The color porcelain enamel on cast iron can be used on gas, electric, ceramic and induction cooktops, as well as in the oven. Not recommended for use on outdoor grills or over open outdoor flames. Not for use in microwaves. Lodge Color Porcelain Enamel on Cast Iron cookware is cast from molten iron in individual sand molds. The porcelain surface eliminates the need to season cast iron. The cast iron vessel has superior heat distribution and retention, evenly heating bottom sidewalls and even the lid. Tightly fitting lid seals in moisture. The excellent heat retention reduces the amount of energy needed for cooking. Two layers of very hard, glossy porcelain enamel are chip resistant and easy to clean. Stainless steel lid knob is oven safe to 500 degrees Fahrenheit. The black rim on the pot is matte porcelain, not exposed cast iron. Hygienic porcelain enamel is non-reactive with food. Although dishwasher safe, hand washing with warm soapy water is recommended to preserve the cookware's original appearance. Made in China.

We have several pieces of non-coated cast iron, and I LOVE the way they perform, so I took a deep breath and ordered several Enameled Cast Iron pieces.
1. This is perfect for oven-to-table use because it's nice-looking as well as tough as nails.
2. The heat retention is fantastic; everything stays hot while you're eating.
3. The heat distribution while cooking is the best I've seen: it caramelizes onions and browns meat evenly and far more rapidly than my non-stick pans and crates a beautiful fond on the bottom which is the cook's ideal result
4. The cleanup is quick and easy, a nylon scrub pad (do NOT use anything that can scratch the surface such as Brillo or cleansers) is all that's needed. I don't put these in a dishwasher, per the manufacturer's recommendation to hand wash.
This is a very hard-to-get size. Basically, only Lodge and Le Creuset make this size. For the price, this is definitely the logical choice. I own quite a bit of enameled cast iron from various brands and have never had problems with the Lodge pieces. I can't understand why anyone would spring for several hundred dollars when the same thing is so much more affordable from Lodge. The only improvement is I wish Lodge used other colors in this size. That's what Le Creuset has over other manufacturers. Greens? Yellows? Oranges? Purples? The jewel tones would be so pretty sitting out on an exposed shelf in the kitchen.
As far as the Lodge dutch oven, all the things that make a difference are there:
-the bottom is flat, not rough so it won't scratch the glass cook top
-the bottom of the dutch oven has a large ratio of cook surface for the volume (as opposed to the cute but illogical apple oven that Lodge makes) so the heating is faster
-the bottom is flat, not concave, for more even heating (a concave bottom is useless, even harmful, on glass cook tops)
-the lid sits snugly on the oven and doesn't rock so steam doesn't escape during cooking with the food drying out
-handles are sufficient for grasping
-the enameled surface allows me to cook more acidic foods, like tomato bases, and white foods, like rice or quinoa, without staining the food
-the size is just right for soup for two, rice, reheating leftovers, two cans of corn, etc.
It's heavy, of course. You hope it's heavy because it's not iron if it isn't. Iron IS heavy - check the periodic table of elements. It'll save that trip to the gym for the reps on the arms.
Meanwhile, remember that the enamel is basically glass which shatters if there is a quick change in temperature. The iron and enamel expand and contract at different rates so warm it with warm water before putting it on a very hot surface, like a hot stove, if you don't want small cracks in the surface. If the inside stains, it's from a strongly colored food entering the small fissures that you created when changing the temperature too quickly. I've recently discovered a great cleaner for these pots - the Kohler cast iron sink cleaner works miracles on the stains in these pots!! Amazing!
After removing all of the contents, initially soak it with water that is a similar temperature. ALL enameled cast iron needs this precaution, the brand doesn't matter. But, with its versatility and length of life, it's worth it!

Ojalá pronto actualicen las medidas correctas para otros compradores.

There is zero sticking of food to the pot, and cooks evenly. I received the package and immediately used it to make my version of apple pie oatmeal. The topping is made separately and even this sugary mixture didn't stick. Perfect!
